Response Surface Methodology (RSM) with central composite design (CCD) was applied to opnrruze simultaneously three factors: (i) CMC content (0.2÷0.4 %, w/v), (ii) sucrose content (15÷25 oBrix) and (iii) citric acid (0.2÷0.4 %, w/v) added in Pouzolzia zeylanica extraxt before undergoing concentration process. The samples were concentrated at vacuum of 600 mmHg during 40 minutes, with each samples volume is 15 liters. The physico-chemical properties of concentrated product as bioactive compounds content (flavonoid, polyphenol and tannin), the color was expressed L* value, nonenzymatic browning index (NEB) and total color difference (ΔE) were analyzed. The study results showed that the optimum content of CMC, sucrose and citric acid were 0.269 %, 19.186oBrix and 0.317 %, respectively. At these optimal conditions, the flavonoid, polyphenol and tannin content of concentrated product were 4.583 mg QE/g DM; 8.093 mg GAE/g DM; 6.044 mg TAE/g DM. Besides, the L value, NEB index, total color difference (Δ.E), total soluble solids (Brix) of product were 36.10, 0.37, 1.71 and 51oBrix, respectively.
