The study aimed to investigate the effects of temperature, solvent-to-material ratio and time extraction on the extraction of methyl gallate from Sonneratia ovata Backer leaves. These extracted conditions were optimized using response surface methodology (RSM) with the Box-Behnken design model. The predicted result showed that the methyl gallate content (MGC) obtained the highest value (5.8948 mgMG/g extract) by using the heat-reflux method under conditions of extraction temperature (71°C), solvent-to-material ratio (26 mL/g) and time extraction (3.1h). To exactly confirm the predicted parameters, experiments were carried out under optimal conditions, and the MGC was then obtained 5.8259 mg/g of the extract. This result demonstrated that the developed RSM model is feasible to propose the optimum variable determination and can be applied to describe the relationship between the extraction factors and the methyl gallate content obtained during the extraction process.
