Striped catfish (Pangasianodon hypophthalmus) is a dominated species in Mekong Delta, Vietnam and fillet nutritional value was assessed. However, the different farming location with different distance from the main water supply may perform a different fillet quality.  Assessment of striped catfish fillet quality at different rearing area was done by sampling harvest fish (0.8-1kg, 10 fish/pond) at nine ponds located in Can Tho province, Vietnam. Fish ponds were classified into three groups such as closed to Mekong river (group 1), closed to Mekong tributaries (group 2) and in inland area (internal channel water supply, group 3).

Collected fish was killed, filleted and evaluated fillet color as well as calculated for fillet yield. Fillet was then stored in ice and transfer to laboratory for chemical composition analysis as moisture, protein, lipid, ash and amino acid content. Pond sediment was collected for analysis of organic matter. General farm information was also collected e.g. area, stocking density, chemical use.

Results showed that sediment organic matter content in ponds group I was significant lower than those of other treatment. The highest percentage of 'white' color fillet (93.3%) was found in group II and it was significant different to group III (53.3%). The 'pink' color was only found in the fillet from group III. The fillet ratio was not significant difference between groups, varied 2.14 to 2.17. Results from linear regression showed that there was no correlation between organic matter content of sediment and fillet color (R2=0.074, p=0.479). Chemical compositions such as protein, lipid, moisture, ash and total amino acid between groups were not significant difference. The correlation was found between some amino acid (valine, alanine, histidine) and fillet color. Supplementation of methionine and lysine showed insignificant difference to enhance fillet color. Increase number of research ponds and more investigation parameters need to be done in order to identify the main causes of different fillet colors from different areas.
