Fruit juice is made from Ha Chau Burmese grape, a specialty fruit of Phong Dien district in Can Tho city. The results showed that the pasteurized juice at 900C during 1140 s still contain high bioactive compounds such as total phenolic compounds (242,367 mgGAE/L Polyphenol), total flvonoid compounds (15,2 mgQE/L ), total antioxidant expressed in DPPH free scavenging IC 50 value (IC 50 57,15%) and vitamin C (0,0009 %mg/ml). The research confirmed that pasteurized Ha Chau can be a potential nutritional product to diversity the beverage juice in Mekong Delata, especially in Can Tho city.
