This paper presents a new principle of the fresh lotus seed peeling unit (hereafter called as peeling part) by using two rollers rotating in the same direction but with different speeds. The peeling part was fabricated based on the new principle, and it was then tested and evaluated the efficiency. The input material of the peeling part is 21-24 days old fresh lotus seeds that have been cut around the seed circumference. The output product is lotus seeds of which the green shell has been separated. The results show that (1) The new peeling part worked efficiently with the successful peeling rate of 88%; (2) The new peeling part overcomes the disadvantages of the previous principles. Especially, it is possible to customize the rolling distance of lotus seeds by changing the difference of rotational speeds of the two rollers; (3) The peeling part can peel the lotus seeds with different diameters; (4) The longer rolling distance of lotus seeds in the peeling part, the higher the success rate of shelling; (5) The success rate of peeling is proportional with the rotational speed of the roller.
