The COVID-19 pandemic has severely impacted the tourism and hospitality industry, necessitating new strategies for recovery and resilience. This study explored the factors influencing tourist satisfaction in local cuisine restaurants in Paris in the post-pandemic context, contributing to a deeper understanding of tourist behavior and preferences, thereby assisting restaurateurs in enhancing their services and offerings. This study adopted a mixed-method approach, comprising both quantitative (online surveys) and qualitative (semi-structured interviews) methods. Participants were international tourists who visited local cuisine restaurants in Paris post-COVID-19. The findings underscore all variables studied as pivotal determinants of tourist satisfaction, arranged in descending order of significance: food quality, cultural authenticity, service quality, perceived value, and restaurant ambiance. Food quality emerged as the most crucial element, with the array of unique, authentic menu items, the use of top-quality ingredients, and culinary finesse in taste and presentation. Tourists significantly appreciated the authentic local experiences and distinct flavors offered. The role of service quality is also vital, indicating the need for comprehensive staff training and customer service management. Equally, perceived value and restaurant ambiance should be integral to the satisfaction strategy. In essence, this research offers valuable insights into what shapes tourist satisfaction at local cuisine restaurants in post-COVID-19 Paris. Its evidence-based recommendations could considerably enhance satisfaction levels and potentially boost the recovery of the city's tourism and hospitality sector in the post-pandemic era.
